Mum's secrets in Thai cooking

The setting for our cooking classes Baan Booloo guest houses is rustic though homey and welcoming with self crafted old wood furniture, orchid plants among the trees, and a coy pond water feature.












This is one of her guesthouses currently under construction.

We start with Pad See Ma for our lunch.


with fresh sheets of rice noodles cut especially to our dish.



mushrooms, green beens, garlic, shallots, green peppercorns, carrots, holy basil and red chilis.


put it all together in a hot wok with oyster, soy and fish sauce, a pinch of sugar.

all our mise en place for squid in chili paste, beef salad and jungle curry


oyster saucem soy sauce, fish sauce, sesame oil and thai chili paste

deep fried chicken in pandanus leaves, the wrapping is the key...


let see, criss cross, fold and tuck the ends until the chicken is securely wrapped.

and there we are with our chicken all ready to be fried


We're working on our Son in Law egg dish: hard boiled eggs are deep fried in hot oil until golden brown











then we fry our chicken until golden.

eggs are topped with fried shallots, a sprig of cilantro and slice of chili pepper topped with a tamarind sauce.

beef salad dressing is basic though Mum's secrets adds lemongrass slices and garlic cloves. toss in the beef first, then the vegetables and serve.



Isn't out final meal beautiful?? From the top: son in law eggs, jungle curry, squid in chili paste, chicken in pandanus leaves, beef salad.
