Second Day of Thai Cooking

The flats make an appearance at class in Sony's apron:

The start of day two, we start to make our own lunch, a favorite, green papaya salad. Peel the papaya, then shred..


















Now that everything is mis en place, time to put the salad together. Into the mixing clay bowl with wooden pestle, first the chilis, garlic cloves and green beans. Mash them until almost pulverized, Followed by seasoning of fish sauce, tamarind liquid, lime juice and palm sugar. Last step is to add the shredded carrots and papaya and macerate with the dressing in the bowl to soften the vegetables.







Finally, add a few tiny dried shrimp, cashews and tomato. Toss and mash a few more times and serve.
